Snapper is best enjoyed fresh but I firmly believe that snapper cooked the day after it is caught is tastier than snapper cooked the same day. Give the fish 24 hours to get rid of all the rigormortis and you have a really nice fish.
Now you can either panfry your snapper or wrap it in tinfoil to cook on the BBQ or in the oven. Remember to gut and scale your fish first though.
Snapper is tasty enough to cook by itself but I always sprinkle some Lemon Pepper inside the gut cavity and on the outsides of the fish before wrapping in tinfoil. Some people use slices of lemon, some use combinations of garlic butter, pepper and various herbs. You can also put 2 or 3 slashes in the side of the fish to help the flavour penetrate the skin. I think any flavouring should be subtle but it really comes down to individual taste.
When panfrying snapper, cook until the flesh turns white then turn the fish over and repeat. Usually a couple of minutes each side (depending on the size of your fish of course) will be sufficient to cook it right through.
When cooking snapper in tinfoil I usually give it a couple of minutes on one side then turn it over. When I can smell the fish it's usually cooked. Try not to dry it out by overcooking but if you've undercooked it, just rewrap it and put it back in the oven or on the BBQ for a few more minutes.
Keep the tinfoil to wrap the bones and skin in after the meal.
