Most people regard Kahawai (sea trout) as being a nuisance fish. Great fun to catch but what do you do with them then? The common belief is that they are only good for smoking.


We were catching so many kahawai this year that I thought that somebody has to have an alternative way of cooking and eating this fish.

My main emphasis was to find something simple enough to be prepared and cooked in a motel or backpackers. So I had a search around and came up with a couple which I simplified (and possibly improved) so that people on holiday can easily create a nice meal.


This recipe is amazingly simple and boy is it tasty!!

I have not had a chance to try this one myself but come summer I will be giving it a try. Apparently it is chunky, spicy salad based on one of the national dishes of Fiji.
