Most people regard Kahawai (sea trout) as being a nuisance fish. Great fun to catch but what do you do with them then? The common belief is that they are only good for smoking.
We were catching so many kahawai this year that I thought that somebody has to have an alternative way of cooking and eating this fish.
My main emphasis was to find something simple enough to be prepared and cooked in a motel or backpackers. So I had a search around and came up with a couple of recipes which I simplified (and possibly improved) so that people on holiday can easily create a nice meal.

This recipe is very easy. It's not very spicy unfortunately but it is fragrant and tasty.
Kahawai Fragrant Fish Curry
(Serves 4)
Preparation Time - 30 mins
Ingredients
Method

Brush a non-stick frying pan with oil and heat over a medium heat |

Add onion and stir occasionlly until clear and soft |

Add curry paste and stir until fragrant |

Add tomatoes and water and bring to the boil |

Add pumpkin and simmer until soft |

Add fish, cover and cook for a further 2 minutes |

Remove from heat |

Add spinach and lime juice |

Stir until spinach just wilted. |

Serve with rice and green beans |

3 tblspn Indian Tikka Masala curry paste |

440g can of chopped tomatoes (no added salt) |

1/2 cup of water |

800g pumpkin (peeled and cubed) |

4 cups of chopped spinach |

Lime juice to taste |

3 cups of steamed white rice |
| · |
2 cups of boiled green beans |
