Most people regard Kahawai (sea trout) as being a nuisance fish. Great fun to catch but what do you do with them then? The common belief is that they are only good for smoking.


We were catching so many kahawai this year that I thought that somebody has to have an alternative way of cooking and eating this fish.

My main emphasis was to find something simple enough to be prepared and cooked in a motel or backpackers. So I had a search around and came up with a couple of recipes which I simplified (and possibly improved) so that people on holiday can easily create a nice meal.

This recipe is very easy and can be prepared and cooked with the minimum of fuss.

Kahawai Fish Pie (Serves 4)
Preparation Time - 30 mins

Ingredients














Method
· 1 medium sized smoked Kahawai or half a big one.
· 1 chopped Onion
· 3 tblspn of butter or margarine or olivani
· 1/2 tspn of curry powder
· 4 tblspn flour
· 2 cups of milk
· Black pepper to taste
· 3 cups of mashed potato
· 1/2 cup of grated cheese
· Shred fish and put aside
· Melt butter (or similar) in saucepan
· Stir in curry powder and cook for about a minute
· Stir in flour and cook until frothy.
· Gradually add milk while stirring. Continue stirring until mixture thickens and boils.
· Remove from heat and add fish and pepper to taste.
· Stir then place fish mixture in oven proof dish
· Cover with mashed potato
· Sprinkle with grated cheese and place under grill until the cheese is melted and lightly browned.
· Serve
