Most people regard Kahawai (sea trout) as being a nuisance fish. Great fun to catch but what do you do with them then? The common belief is that they are only good for smoking.
We were catching so many kahawai this year that I thought that somebody has to have an alternative way of cooking and eating this fish.
My main emphasis was to find something simple enough to be prepared and cooked in a motel or backpackers. So I had a search around and came up with a couple of recipes which I simplified (and possibly improved) so that people on holiday can easily create a nice meal.

Kahawai Cajun Style (Serves 2)
Preparation Time - 2 mins
Ingredients

2 fillets of Kahawai |

Masterfoods Cajun Seasoning |

Plain Unsweetened Yoghurt |

Liberally coat both sides of each fillet with the Cajun Seasoning and leave to sit for 5-10 mins |

Heat a non-stick frypan with a small amount of oil and a dollop of butter |

Add fillets and cook for about a minute each side. Be careful not to dry the fish out, it is cooked when the flesh inside is white and moist right through. |

Serve with vegetables, salad or even baked potatoes (depending on the season) |
