Most people regard Kahawai (sea trout) as being a nuisance fish. Great fun to catch but what do you do with them then? The common belief is that they are only good for smoking.
We were catching so many kahawai this year that I thought that somebody has to have an alternative way of cooking and eating this fish.
My main emphasis was to find something simple enough to be prepared and cooked in a motel or backpackers. So I had a search around and came up with a couple of recipes which I simplified (and possibly improved) so that people on holiday can easily create a nice meal.
This recipe is my absolute favorite, it is a very fulfilling meal (and I'm a big eater).
Kahawai Baked in Foil (Serves 4)

Serve with boiled potatoes and enjoy.
Note: I have been using Watties Sage/Onion Roasters instead of boiled potatoes and they seem to compliment this meal very nicely.

Fillet the kahawai, remove the skin and any remaining bones. |

Cut each fillet in half. |

In a heavy hot pan heat three tablespoons of olive oil and then cook the kahawai, skin side down for about a one minute. |

On to each square of foil place first the sliced onion and garlic, then the kahawai |

everything else goes on top - finishing with the lemon slices and splashes of oil. |

Form into enclosed parcels and bake for 25 minutes at 230°C |
